Blueberry Lemon Pie

Fresh, sweet Blueberries and the zing of lemons are an unmistakable taste of summer weather!

We have a simple and mouth-wateringly good Blueberry and Lemon Pie for you. A winning combination between traditional and a little something extra.

Large Pie

Ingredients

  • 2 (9″) Refrigerated pie crusts (2 to a pack)
  • 3 cups fresh blueberries
  • ¼ cup sugar
  • Zest from 1 lemon
  • 3 tablespoons Indian River Select Lemonade (divided)
  • 1 tablespoon cornstarch
  • ½ cup flour
  • pinch salt
  • ¼ cup soft butter

    Instructions

    1. Preheat oven to 450°
    2. Place the blueberries in a small bowl then add the lemon zest, 2 tablespoons lemonade, cornstarch, and sugar; set to one side
    3. Remove pie crust from the packaging, unroll, and cut to the size of your pie dish, place inside the dish
    4. Mix the flour, salt, 1 tablespoon of lemonade and soft butter until crumbly
    5. Add the blueberry mixture to your dish and then divide the crumbly mixture over the pie
    6. Bake for about 15-20 minutes or until the pie crust is slightly golden (note – will take a bit longer if using huge blueberries)
    7. Allow to cool on a rack then remove pie
    8. Can be served warm or at room temperature

    Individual Pies

    Ingredients

    • 2 (9″) Refrigerated pie crusts (2 to a pack)
    • 3 cups fresh blueberries
    • ¼ cup sugar
    • Zest from 1 lemon
    • 3 tablespoons Indian River Select Lemonade (divided)
    • 1 tablespoon cornstarch
    • ½ cup flour
    • pinch salt
    • ¼ cup soft butter

      Instructions

      1. Preheat oven to 450°
      2. Place the blueberries in a small bowl then add the lemon zest, 2 tablespoons lemonade, cornstarch, and sugar; set to one side
      3. Place 12 regular mason rings on a rimmed cookie sheet and insert the lids metal side up
      4. Remove pie crust from packaging, unroll and cut out twelve 4″ rounds, and place inside each jar ring
      5. Mix the flour, salt, 1 tablespoon of lemonade and soft butter until crumbly
      6. Divide the blueberry mixture between the 12 rings and then divide the crumbly mixture over each pie
      7. Bake for about 12-13 minutes (will take a bit longer if using huge blueberries)
      8. Allow to cool on a rack then remove the pies from the rings
      9. Can be served warm or at room temperature
