Crispy Orange Beef

If your family is anything like ours you know how hard it is to keep the meals interesting, healthy, and tasty. This delicious Crispy Orange Beef is made in a heavenly orange sauce – and checks all the boxes. Ideal for when you are in a rush but still want to serve a wholesome meal, this should take you 25 – 30 minutes.

Ingredients

  • 3 tbsp oil
  • 1.1 lb beef steak cut into strips
  • 2 tbsp cornstarch
  • 1 pinch of salt and pepper
  • 1 red pepper  sliced
  • 1 large onion  peeled and sliced
  • Zest half an orange
  • ½ cup of Indian River Select Orange Juice
  • 5 tbsp soy sauce
  • 3 tbsp caster sugar
  • 2 cloves of garlic  peeled and crushed
  • 1 tsp rice vinegar
  • 1 tsp ginger paste

    Instructions

    1. Heat oil in a wok or large frying pan over high heat.
    2. Pat beef dry, then mix the cornstarch with the salt and pepper and toss the beef in the cornstarch until completely coated.
    3. Once oil is hot, add the beef and fry until crispy. Avoid moving the meat around too much, this reduces the amount of crispiness you get. It should take about 5-6 minutes to crisp up the beef, with about 3 or 4 stirs during that time.
    4. Once the beef is crispy and cooked through, remove using a slotted spoon, and place in a bowl lined with a paper towel to soak up excess fat.
    5. After the beef has been removed from the pan there should still be a little oil left. Turn the heat down to medium and add the sliced red pepper and onion.
    6. Fry for 2-3 minutes (hot but still crunchy).
    7. While the peppers and onions are cooking, mix the orange zest, orange juice, soy sauce, sugar, garlic, rice vinegar, and ginger and put to one side.
    8. Pour the orange sauce over the peppers and onions. Turn up the heat and bring to the boil. Simmer for 1 minute.
    9. Add the beef back. Give it a stir and heat through for 1 minute. If your sauce looks too thin, you can stir in a little cornstarch slurry to thicken it.
    10. Once bubbling and thick, serve up with boiled rice or noodles. Garnish with scallions.
