Easy Lemon Cookie

When life gives you lemons, make cookies with them!

We have the best summertime cookie recipe to brighten your day! These lemon cookies will give you the perfect hint of citrus and are guaranteed to be your new go-to dessert.

Splash some of our lemonade into the recipe, and prepare to bake!

Ingredients:

• 1/2 cup butter or margarine, melted
• 1 cup sugar
• zest of 1 lemon
• 1/4 cup Indian River Select Lemonade
• 2 cups plain flour
• 1/2 teaspoon baking powder

Directions:

1. Preheat oven to 350°F.
2. Place all the ingredients in a bowl and mix well.
3. Take spoonfuls of mixture and roll them into balls.
4. Place onto a lined baking tray and flatten slightly using the palm of your hand.
5. Press a fork onto each biscuit.
6. Bake for 20 minutes or until golden and crisp.
7. If you want a sweeter option you can drizzle them with a simple lemon glaze.
