Frozen No-Bake Anniversary Lemon Cake

INGREDIENTS

  • 5 oz animal crackers or graham crackers
  • 3 tbsp. Sugar or any preferred sweetener
  • A pinch of table salt
  • 4 tbsp. Unsalted butter, melted
  • 2 pints vanilla ice cream
  • 16 oz whipped cream, thawed and divided
  • 1 container of frozen Indian River Select Lemonade, thawed
  • 10 oz jars lemon curd
  • 1 tsp. Yellow gel food coloring, divided

 

DIRECTIONS

1. Heat oven to 325 degrees. Put crackers, sugar, and salt together in a food processor until finely ground.

  1. Add melted butter to the mixture until fully combined, then transfer crumb mixture to greased springform pan. Press crumb mixture into the bottom of the pan firmly, then bake until fragrant and beginning to brown (about 12 to 14 minutes). Let cool completely.
  1. Scoop your vanilla ice cream into a large bowl and then break up the scoops using a rubber spatula. Stir and fold ice cream to achieve a smooth consistency. Once done, stir in 2 and a half cups whipped topping and Indian River Select Lemonade into the bowl until combined.
  1. Pour half of the ice cream mixture into cooled-down crust and smooth top with a spatula. Transfer the pan and bowl with the remaining ice cream mixture into the freezer until firm.
  1. Using a separate bowl, stir lemon curd, ½ teaspoon yellow food coloring, and remaining 2 and a half cups whipped together.
  1. Spread lemon curd mixture into an even layer over your frozen ice cream layer. Return pan to freezer until firm.
  1. Scoop your remaining half of the ice cream mixture into a large bowing then break up scoops of ice cream again, then stir until your desired consistency is reached. 
  1. Spread the ice cream over the frozen lemon curd layer, then freeze your cake again until fully firm for up to 24 hours. 
  1. Once frozen, take out from freezer, slice, and serve!
