Ingredients

    • 2 Lbs. Chicken wings, cut at the joint
    • 2 Tbsp. Roasted Garlic Olive Oil
    • 1/2 Tsp. Onion powder
    • 1/4 Cup Grapefruit Balsamic Vinegar
    • 1/4 Cup Ruby Red Grapefruit juice
    • 1/3 cup honey
    • 1 tablespoon soy sauce
    • 2 Garlic cloves, finely minced
    • Kosher salt and freshly ground black pepper

    Instructions

    1. Preheat Oven – Set your oven to 400°F.
    2. Prepare Baking Sheet – Line a baking sheet with tin foil or parchment paper. Place a baking rack on top of the sheet. Spray the rack with cooking spray.
    3. Prepare Chicken Wings – Pat dry the chicken wings using paper towels. Place the wings on the prepared baking rack. Brush the wings with garlic olive oil. Lightly sprinkle onion powder, salt, and pepper on the wings.
    4. Bake Wings – Place the chicken wings in the oven and bake for 50-55 minutes.
    5. Make the Sauce – While the wings are baking, prepare the sauce on the stove. In a small pot over medium heat, combine grapefruit juice, balsamic vinegar, garlic, brown sugar, and a pinch of salt. Bring the mixture to a boil for about one minute. Remove from heat and let it rest. The sauce will thicken and become syrupy as it cools.
    6. Brush and Flip – After the wings have baked for about 25 minutes, take them out of the oven. Brush the wings with the sauce, flip them, and brush the other side. Return the wings to the oven. Repeat this process 3-5 more times, cooking for an additional 30-35 minutes. The total cooking time should be about 50-55 minutes.
    7. Finish Wings – After the wings are fully cooked, brush them with a final coat of glaze. Place the wings under the broiler for about 2 minutes to get them golden brown and slightly charred. Watch closely to prevent burning.
    8. Serve – Sprinkle the wings with a little salt and freshly ground black pepper. Serve on a platter and garnish with fresh grapefruit wedges. Squeeze the grapefruit over the wings for added flavor. Enjoy!
