Orange Ricotta Pancakes

Weekend brunches are the best! Here is an all-time favorite with a super refreshing twist. It could not be simpler to whip these up for your family or guests. They will definitely be back for more!


  • 1-1/2 cups all-purpose flour
  • 3 tablespoons sugar
  • 1-1/2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 large egg, room temperature
  • 1 cup part-skim ricotta cheese
  • 3/4 cup milk
  • 1/2 teaspoon grated orange zest
  • 1/2 cup Indian River Select orange juice
  • 1/4 cup butter, melted
  • 1/2 teaspoon vanilla extract
  • Optional: Maple syrup and confectioners’ sugar


    1. Mix ingredients together until lumps are removed.
    2. Spray pan and cook pancakes.
    3. Top with maple syrup and sugar
    4. ENJOY!


    1. Add some orange zest to the bottom of your plate for garnish.
    2. This would make a great dessert with a scoop of ice cream.
